Tajine of Sea Bream

- 2 onions
- 2 Garlic cloves
- 1 kg sea bream fillet (with bones)
- 2 tbsp olive oil
- 1 tbsp freshly grated ginger
- 1 tbsp ground turmeric
- 0.5 tsp ground cumin
- 1 tsp dried thyme
- a pinch cinnamon
- Salt
- black pepper (ground)
- 400 g diced tomatoes
- 4 salt lemons
- 4 small carrots
- 1 Zucchini
- 1 tbsp honey

Peel and halve the onions, then slice into strips. Peel and finely chop the garlic. Rinse the sea bream, pat dry, and cut into 12 pieces. In a tajine over hot oil, brown all sides of the fish pieces, then remove. Add the onions, garlic, ginger, turmeric, cumin, thyme, and cinnamon; season with salt and pepper, and pour in tomatoes with a splash of water. Return the fish to the pot, cover, and simmer gently for about 45 minutes, adding more water if needed.

Drain the lemons. Peel the carrots. Wash and cut the zucchini into rounds. During the last 10–15 minutes, arrange the carrots, zucchini, and lemons over the fish.

Before serving, taste and adjust with honey, salt, and pepper.
