Tuna Vegetable Skewers on Rice

Ingredients
- 300 g whole grain rice
- Salt
- 3 ripe tomatoes
- 1 large zucchini
- 2 red bell peppers
- 500 g tuna fillet (ready to cook, skin removed)
- 2 tbsp olive oil
- Sea salt
- Pepper (freshly ground)
- thyme (for garnish)
- basil (for garnish)
Instructions

Cook the rice in 600 ml boiling salted water. Blanch the tomatoes, shock them, peel, quarter, seed and dice the flesh into small cubes. Wash and clean the zucchini and bell peppers. Cut the zucchini lengthwise in half and slice into 1 cm wide pieces.

Quarter the bell peppers, seed and cut into bite-sized pieces. Rinse the tuna, pat dry and cut into 2x2 cm cubes. Alternate threading the zucchini, bell pepper and tuna onto wooden skewers and sear each side for 1-2 minutes in a hot pan with oil.

Remove from heat and season with salt and pepper. Mix the tomato cubes into the rice, arrange the skewers on small bowls and serve garnished with thyme and basil.
