Tuna Bean Salad with Potatoes, Olives and Eggs

Ingredients

  • 1 small head of lettuce
  • 250 g green beans
  • Salt
  • 4 tomatoes
  • 2 hard-boiled eggs
  • 300 g small young cooked potatoes
  • 1 tin tuna (in water)
  • small jar anchovies (in oil)
  • 50 g black olives
  • 2 cloves garlic (peeled, large cloves sliced)
  • Lemon juice
  • salt pepper
  • 6 tbsp Olive oil

Instructions

    Wash beans, trim ends, cut in half crosswise and cook in plenty of salted water for about 8 minutes, cool under cold running water and drain well. Wash tomatoes, pat dry and quarter them, wash lettuce, spin dry and tear into bite-sized pieces. Peel eggs and also quarter them. Cut potatoes in halves or quarters. In a large bowl add all salad ingredients except eggs and olives.

    Sauté garlic in 2 tbsp olive oil, let cool. Mix remaining ingredients for the vinaigrette, add the garlic with the oil, toss with the salad and serve on plates.

    Drain tuna, break into pieces and distribute over the salad along with anchovies, eggs and olives.
