Trout with Broccoli Vegetables

Ingredients
- 4 trout fillets (pre-cooked, about 300 g each)
- Lemon juice
- Salt
- black pepper (freshly ground)
- 50 g flour
- 2 tbsp clarified butter
- 500 g broccoli florets
- 3 tbsp butter
- 2 tbsp freshly chopped parsley
Instructions

Rinse the trout and pat dry. Drizzle with lemon juice inside and out, then season with salt and pepper. Dredge in flour and cook in a hot pan with clarified butter.

Heat 2 tbsp clarified butter in a skillet and fry the fish on each side for 5-6 minutes until golden brown, basting occasionally with the butter. When the dorsal fin can be easily pulled off, the fish is cooked through.

Rinse the broccoli and drain. Sauté lightly in 1 tbsp butter, season with salt, add a splash of water, cover and steam gently for about 5 minutes.

Remove trout from the pan and arrange on pre-warmed plates.

Whisk the remaining butter in the pan until foamy, let it brown slightly, then stir in almonds and parsley before spooning over the fish. Add broccoli and serve immediately.
