Grilled Trout

Spoonsparrow grilled trout are the star of every grill night and guaranteed to be a hit!

Ingredients

  • 4 trout (each about 300 g)
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp olive oil
  • 3 tbsp capers
  • 2 lemons

Instructions

    Rinse the trout with cold water and pat dry gently with kitchen paper. Roughly crush 1 tbsp of capers in a mortar, mix with olive oil and juice of half a lemon. Season with salt and pepper. Salt and pepper the inside cavity of each trout.

    Brush the outside all over with the oil-capers mixture. Grill the trout on a medium‑heated, not too hot wood charcoal grill for about 6 minutes per side. Slice remaining lemons into wedges. Serve grilled trout garnished with extra capers and lemon wedges.
