Triple Tomato Ketchup

Ingredients

  • 3 onions and garlic cloves
  • 1 small red, yellow and green bell pepper each
  • 250 g red, yellow and green tomatoes each
  • 3 tbsp olive oil
  • 3 cloves allspice
  • 3 small bay leaves
  • Salt
  • Tabasco
  • 6 tbsp sugar
  • 9 tbsp vinegar
  • 3 stems basil
  • 1-2 tbsp whisky

Instructions

    Peel onions and garlic, finely dice. Halve peppers, clean, wash, dice. Clean, wash, dice tomatoes. Set prepared ingredients aside by color.

    Heat 1 tablespoon olive oil, sauté one diced onion in it. Add one garlic clove and red pepper cubes, sauté briefly. Add red tomatoes, 100 ml water, 1 allspice, 1 bay leaf, ½ tsp salt and a splash of Tabasco; simmer about 40 minutes.

    Process yellow tomatoes and peppers and green tomatoes and peppers similarly. Then add 2 tbsp sugar and 3 tbsp vinegar to each batch, remove bay leaves.

    Wash basil, chop leaves, add to green tomato mixture. Season yellow tomatoes with whisky. Very finely puree prepared tomatoes separately, taste again, bring to a quick boil. Pour hot into carefully prepared bottles and seal tightly.
