Tree Stroll

Try the crispy Tree Stroll from Spoonsparrow. We love this pastry from Transylvania.

Ingredients

  • 300 g whole wheat flour
  • 220 g flour
  • 21 g yeast (0.5 cube)
  • 70 g honey
  • 250 ml lukewarm milk (3.5% fat)
  • 100 g melted butter
  • 2 Eggs
  • 30 g coconut blossom sugar

Instructions

    Sift 200 g flour and whole wheat flour into a bowl, create a well in the center. Crumble yeast and dissolve with 1 tbsp honey in a little lukewarm milk, then pour into the well and stir with a bit of flour to make a pre-ferment. Cover and let rise in a warm place for about 15 minutes.

    Add remaining milk, remaining honey, half the butter and eggs, knead into a smooth dough. Cover and let rise another 30 minutes.

    Knead the dough again, then roll it out on a floured surface to 4–5 mm thickness. Cut into strips about 1.5 cm wide, wrap around preheated sticks, press ends together, roll lightly flat. Brush with melted butter and sprinkle coconut blossom sugar.

    Bake over an open fire, grill or special ovens (like for Baumkuchen) while constantly turning. Bake for about 15 minutes until the pastries are golden brown with a crisp shell, brushing with butter occasionally.

    Tap them off the molds and serve cut into pieces.
