The fresh avocado cream from Spoonsparrow is quick to prepare and complements quesadillas and more perfectly!
Ingredients
- 1 Shallot
- 2 ripe avocados
- 1 Lime
- 5 stems coriander
- Salt
- black pepper
- Cayenne pepper
- 5 chives

Peel and finely chop the shallot. Slice the avocados lengthwise, remove the pit, and loosen the flesh from the skin. Cut the lime in half and squeeze out the juice. Wash the coriander, shake dry, and finely chop.

Blend the avocado with lime juice and coriander until smooth. Fold in the chopped shallot, season with salt, pepper, and cayenne pepper. Wash the chives, shake dry, slice into fine ribbons. Sprinkle with a touch of cayenne pepper and serve topped with the chive ribbons.
