Tortilla with Fish Sticks

Ingredients
- 1 red bell pepper
- 1 onion
- 1 Garlic clove
- 600 g boiled peeled potatoes
- 8 fish sticks
- 3 Tbsp plant oil
- Salt
- Pepper
- 8 eggs
- 4 tbsp whipping cream
- 1 Tbsp freshly chopped thyme

Wash the bell pepper, halve it, clean and cut into small pieces. Peel and finely dice the onion and garlic. Peel the potatoes and slice them.

Pan-fry the fish sticks in a non-stick pan with 2 tbsp hot oil for 5-6 minutes until golden brown, then remove from the pan. Drain the oil, wipe the pan and add the remaining oil. Heat again and lightly fry the potatoes for about 5 minutes until slightly golden. Add onions, garlic and bell pepper, season with salt and pepper, and cook together for 4-5 minutes. Split the fish sticks in half and arrange them over the vegetables.

Whisk the eggs with cream and thyme, seasoning with salt and pepper. Pour over the ingredients in the pan, simmer on low heat for 5-6 minutes until set, then serve.
