Tortilla with Beef, Bell Pepper and Strawberries
A tortilla with beef, bell pepper and strawberries from Spoonsparrow brings spring to the plate!
Ingredients
- 450 g sirloin steak
- 2 red onions
- 3 Garlic cloves
- 1 bulb fennel
- 1 yellow bell pepper
- 250 g strawberries
- 1 small white onion
- 1 red chili pepper
- 2 ripe avocados
- 1 Lime
- 10 g coriander (0.5 bunch)
- Salt
- Pepper
- 8 whole wheat tortillas
- 2 tbsp olive oil
- 60 g hummus
- 80 g sour cream
Instructions

Pat the steak dry with paper towels, remove any fat trim and slice into strips. Peel the red onion and cut into strips as well. Peel the garlic and finely chop it. Wash, clean, halve lengthwise, discard the core of the fennel and cut crosswise into strips. Wash, clean, halve, seed and cut the bell pepper into strips. Wash, clean, deseed and slice the strawberries.

For the guacamole, peel and finely chop the white onion. Wash, clean, seed and dice very small the chili pepper. Peel, halve lengthwise, seed and separate the flesh of the avocados from their skins. Cut the lime in half and squeeze out its juice. Wash coriander, shake dry and finely chop the leaves. Blend the avocado with lime juice and coriander in a blender until smooth. Mix the avocado puree with onion and chili dice and season with salt and pepper.

Warm the tortillas in the oven according to package instructions.

Heat 1 tbsp oil in a pan over high heat and sear the steak for about 2 minutes. Remove and set aside. Add remaining oil to the pan and sauté onions, garlic, fennel and bell pepper over medium heat for about 5 minutes. Return the steak and cook another 2 minutes. Sauté strawberries briefly. Spread hummus on the tortillas, top with the filling, fold and arrange on four plates. Serve with guacamole and sour cream.
