Ingredients

  • 500 g waxy potatoes
  • 1 onion
  • 4 tbsp olive oil
  • 6 Eggs
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp grated cheese (e.g., Manchego)
  • 4 baguette rolls
  • 8 iceberg lettuce leaves
  • 4 slices Serrano ham
  • 100 g sardines in oil

Instructions

    Preheat the oven to 180°C fan-forced.

    Peel and slice the potatoes. Peel and finely dice the onion. Fry the potatoes slowly covered in hot oil in a non-stick pan for about 15 minutes, turning occasionally. Beat the eggs with salt, pepper and cheese and pour over the vegetables. Bake in the oven for 15-20 minutes until set.

    Halve the rolls lengthwise and bake in the oven for about 5 minutes to crisp the cut surfaces. Wash, dry and tear the lettuce into small pieces. Cut the ham into bite‑sized pieces and drain the sardines.

    Remove the tortillas from the oven, let them cool slightly, then cut into pieces. Layer the lettuce, tortilla pieces, ham and sardines on the rolls and serve.
