Ingredients

  • 800 g potatoes
  • 1 bell pepper
  • 3 cloves garlic
  • 1 onion
  • 4 tbsp olive oil
  • thyme (2 tsp chopped)
  • rosemary (2 tsp chopped)
  • 10 eggs
  • 125 ml milk
  • Salt
  • Pepper (freshly ground)
  • 200 olives (green, stuffed with paprika)
  • 30 skewers

    Peel and wash the potatoes, slice them 3-4 mm thick. Wash, trim, halve, deseed, remove white membranes from the bell pepper and dice it small. Peel and mince the garlic, peel and dice the onion. Heat olive oil in a large non-stick pan, lightly sauté the garlic and onion. Add the bell pepper, then the potatoes; cover and cook over low heat for about 15-20 minutes until the potatoes are almost tender, turning occasionally. Whisk the eggs with the herbs and milk, season with salt and pepper, pour over the potatoes, cover and let set on very low heat for about 20 minutes. Transfer the tortilla to a plate and cool. Cut into roughly 30 pieces and skewer one olive on each with a skewer. Serve additional olives on the side.
