Ingredients
- 200 g tortellini (e.g., spinach-ricotta filling)
- 0.5 bunch spring onions
- 2 cloves garlic
- 2 tbsp olive oil
- 600 g diced tomatoes (canned)
- Salt
- Pepper (freshly ground)
- 40 g Parmesan
- Basil
Instructions

Wash, trim, and slice spring onions into thin rings. Peel and mince garlic. Sauté both in hot olive oil, add tomatoes, season with salt and pepper, and simmer for a few minutes. Meanwhile, cook tortellini in boiling salted water according to package instructions.

Arrange the cooked tortellini with tomato sauce on plates, shave parmesan over it, and garnish with basil.
