Soy Curry Sausage with Fries

Ingredients
- 1 egg yolk (very fresh)
- Salt
- pinch sugar
- 1 tsp Mustard
- 125 ml sunflower oil
- 1 tbsp Lemon Juice
- 1 kg large waxy potatoes
- 1.5 L deep-frying oil
- Salt
- 4 vegetarian curry sausages (Reformhaus)
- 1 Tbsp clarified butter
- ketchup (optional)
- curry powder

For the mayonnaise it is important that the ingredients are as close to the same temperature as possible. Whisk the egg yolk with a little salt, mustard and sugar until smooth. Add the oil in a slow stream while constantly whisking with a whisk until the mixture thickens and becomes creamy. Alternate adding the remaining oil with lemon juice. Season with salt and refrigerate until serving.

Prepare the fryer and heat it to about 170°C or heat fat in a sufficiently large pot (the fat is hot enough when bubbles rise on a wooden spoon handle dipped into it). Peel the potatoes, cut them into sticks, and dry well.

Fry the potato sticks in batches for 4-5 minutes until golden brown. Drain and season with salt.

Slice the curry sausages with a sharp knife. Heat the clarified butter in a pan and fry the sausages over medium heat for about 4 minutes until golden brown. Cut into pieces, sprinkle with curry powder, and serve with ketchup, fries, and mayonnaise.
