Crunchy Wonton Dough with Avocado and Trout Caviar

Ingredients
- 10 frozen wonton wrappers (about 9 x 9 cm, available at Asian grocery stores)
- 400 ml oil (for frying)
- 2 Avocados
- 1 tbsp Lemon Juice
- 20 ml high-quality olive oil
- Salt
- Pepper
- 1 tsp sugar
- 50 g trout caviar

Thaw the wonton wrappers. Then cut each diagonally in half with a sharp knife (you can wrap any remaining wrappers tightly in plastic and refreeze).

Heat oil in a tall pot to 180°C. Carefully slide three wrappers at a time into the hot fat, stirring gently with a wooden spoon or small slotted spoon until evenly golden brown. Remove the crisp sheets and drain on paper towels.

Halve the avocados and remove the pits. Scoop the flesh into a bowl. Add lemon juice and olive oil, season with salt, pepper, and sugar, then blend everything with an immersion blender.

Cover the avocado mousse with plastic wrap and refrigerate until up to 30 minutes before serving.

Just before serving, place a tablespoon of avocado mousse on each crisp sheet and top with ¼–½ tsp trout caviar. Consume promptly as the dough softens quickly under the mousse.

TIP: Because avocados oxidize and brown easily, it is advisable not to prepare the mousse more than two to three hours in advance.
