Ingredients
- 400 g dried tortellini (filling of choice)
- 300 g cherry tomatoes
- 150 g fresh spinach leaves
- Salt
- Pepper
- 100 ml Vegetable broth
- 100 g shredded mozzarella (for sprinkling)
Instructions

Cook the tortellini in plenty of salted water until tender. Wash, pat dry, and halve the cherry tomatoes. Rinse and trim the spinach. Drain the tortellini and let it cool slightly.

Heat the broth, then mix in the tomatoes and spinach, stirring to combine with the tortellini. Sprinkle mozzarella over the top, fold gently, season to taste, divide into bowls, and serve.
