Ingredients
- 1 can of mandarins (about 312 g drained weight)
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp ginger (freshly grated)
- 1 clove garlic (crushed)
- 4 tbsp liquid honey
- 800 g chicken breast fillets (with skin)
- 60 ml olive oil
- Salt
- Pepper (freshly ground)
- 200 g romaine lettuce
- 100 g fresh coriander
- 50 g cashew nuts (roasted)
- 4 small beetroot pieces (cooked and quartered)

Mix the mandarins with their juice and all other dressing ingredients in a bowl, then set aside.

Rub the chicken breasts with olive oil and season with salt and pepper. Cook the fillets in a grill pan over medium heat for about 10 minutes per side until cooked through and the skin is crispy.

Slice the fillets and arrange them on plates with washed and dried lettuce leaves, coriander, cashew nuts, and beetroot. Drizzle with dressing and serve immediately.
