- 500 g Green Asparagus
- 5 tbsp olive oil
- Salt
- black pepper (freshly ground)
- 100 ml poultry broth
- 2 tbsp lemon juice
- 4 chicken breast fillets (about 120 g each)
- 2 Avocados
- 40 g chopped walnuts

Peel the lower third of the asparagus spears. Sauté in 2 tablespoons hot oil, season with salt and pepper, then deglaze with poultry broth. Cover and steam for about 5 minutes. Remove from heat, drizzle with lemon juice and remaining 2 tablespoons of olive oil, and let it cool to lukewarm.

Wash the chicken breasts, pat dry, and slice into strips. In the remaining oil, fry for 2-3 minutes until golden brown, seasoning with salt and pepper.
