Ingredients
- 300 g Couscous
- 300 ml boiling salted water
- 0.5 bunch spring onions
- 1 green bell pepper
- 1 tbsp Raisins
- 3 Garlic cloves
- 0.5 tsp Coriander powder
- 6 tbsp Olive oil
- 3 tbsp Lemon juice
- Salt
- black pepper (ground)
- 4 tbsp finely chopped mint
- 4 tbsp finely chopped parsley
- 12 Cherry tomatoes
- mint leaves for garnish
Instructions

Pour boiling salted water over the couscous and let it soak for 5 minutes. Fluff the couscous with a fork and set aside warm.

Soak raisins in warm water.

Briefly blanch tomatoes, shock them, and peel.

Wash pepper, halve, deseed, and dice into very small cubes.

Wash spring onions, trim, and finely chop. Peel garlic and mince finely.

Blanch tomatoes again for a few seconds, shock, and peel.

Combine pepper, spring onions, and garlic; season with coriander, salt, and pepper. Add oil, lemon juice, and 1/2 cup hot water. Mix in a bowl with couscous, the vegetables, raisins, herbs, tomatoes, and arrange on a plate with mint leaves.
