Tomatoes with Avocado Filling

Ingredients
- 3 medium ripe tomatoes (ripe tomatoes)
- 1 ripe Avocado
- 0.5 lemon
- 3 stems coriander
- 1 small green pepperoni
- 4 endive salad leaves
- Salt
- Pepper
Instructions

Wash the tomatoes, cut off a lid, hollow them out, remove the seeds and chop the remaining flesh.

Halve the avocado, remove the pit and scoop the flesh with a spoon. Squeeze the lemon, mix the avocado flesh with the juice and roughly mash it with a fork. Fold in the tomato pieces.

Wash the pepperoni, halve, deseed and peel the inner skins, then finely chop. Wash the coriander, set aside some leaves, chop the rest. Season the avocado mixture with pepperoni, coriander, salt and pepper and fill the tomatoes.

Wash the salad, remove the stem and slice into fine strips. Scatter on a plate and arrange the tomatoes on top.
