Tomato-Zucchini Casserole with Garlic

Ingredients

  • 2 onions
  • 2 zucchinis
  • 800 g tomatoes
  • 5 tbsp olive oil
  • 2 cloves garlic
  • Salt
  • Pepper
  • 4 sprigs thyme

Instructions

    Peel the onions and slice them into thin rings. Heat 2 tablespoons of oil in a pan over medium heat. Sauté the onions until translucent.

    Wash, clean, and cut the zucchini and tomatoes into about 1 cm thick slices. Place the onions in a baking dish and layer alternating one layer of zucchini and one layer of tomato on top. Peel the garlic cloves, slice them, mix with salt, pepper, and the remaining oil, then pour over the vegetables.

    Bake in a preheated oven at 180°C (160°C fan; gas: level 2–3) for 30–35 minutes until golden brown. Meanwhile wash the thyme and shake it dry. Place the thyme sprigs on top of the casserole. Serve immediately.
