Ingredients

  • 1 head cauliflower (as small as possible)
  • 250 g tomatoes
  • Butter (for greasing the baking dish)
  • Salt
  • Pepper
  • nutmeg
  • 3 eggs
  • 250 g whipping cream
  • 200 g mozzarella

Instructions

    Clean the cauliflower, break into florets, rinse and drain. Wash the tomatoes, cut into large wedges, removing the stem ends.

    Grease a baking dish and place the vegetables inside. Whisk together the eggs, cream, salt, pepper, and nutmeg; pour over the vegetables and bake in a preheated oven at 170 °C for about 15 minutes.

    Meanwhile slice the mozzarella thinly. Spread it over the gratin and bake for another 10–15 minutes until golden brown. For extra browning, you can turn on the grill function of your oven during the last 1–2 minutes.
