Cheese Cauliflower Gratin

Ingredients
- 700 g cauliflower florets
- Salt
- 3 tbsp butter
- 1.5 tbsp spelt whole‑grain flour
- 200 ml Milk (3.5% fat)
- 150 ml Heavy Cream
- 150 g freshly grated Bergkäse cheese
- Salt
- black pepper (freshly ground)
- Nutmeg (freshly grated)
- 2 Spring Onions
Instructions

Wash and trim the cauliflower florets, then blanch them in boiling salted water for 6–8 minutes. Drain, shock with cold water, and let drain well.

Melt 2 tbsp butter in a saucepan, sprinkle in the flour, stir until lightly browned, then deglaze with milk and cream. Continue stirring over medium heat for about 4 minutes, then fold in half of the cheese. Let melt and season the sauce with salt, pepper, and nutmeg.

Wash and trim the spring onions, slicing them into thin rings.

Arrange the cauliflower and spring onion slices in a butter‑greased baking dish, pour over the sauce, and sprinkle the remaining cheese on top. Bake in a preheated oven at 200 °C (180 °C fan) for about 20 minutes until golden brown.

Remove from the oven and serve immediately.
