Tomato Tofu with Green Beans

Tomaten-Tofu mit grünen Bohnen und Basmatireis von Spoonsparrow: Angenehm scharf und mit extra viel Eiweiß!

Ingredients

  • Salt
  • 150 g Basmati rice
  • 200 g Green beans
  • 300 g Tofu
  • 2 tbsp Rapeseed oil
  • 1 clove of garlic
  • 400 g cherry tomatoes
  • 0.5 tbsp maple syrup
  • 2 tbsp Soy sauce
  • 1 tsp sriracha
  • Pepper
  • 1 tbsp black sesame seeds
  • 1 tbsp white sesame seeds

Instructions

    Bring lightly salted water to a boil and cook rice according to package instructions. Wrap tofu in kitchen paper and squeeze out excess liquid. Remove paper and cut tofu into approximately 1.5 cm cubes.

    Wash beans, drain, trim and cook in boiling salted water for about 10 minutes.

  3. 3.

    Heat oil in a pan. Add tofu to the pan, brown over medium heat for about 6 minutes and then remove from the pan.

    Meanwhile, peel and finely chop garlic. Add garlic to the still hot pan and sauté. While doing so, wash tomatoes, quarter them and add them to the pan.

  5. 5.

    Add maple syrup and soy sauce and simmer for about 3 minutes. Season with sriracha sauce and pepper. Add tofu and simmer for a minute.

    Distribute rice and beans on two plates, add the tofu pan and sprinkle with black and white sesame seeds.
