Vegetable Fries with Ketchup
With the vegetable fries with ketchup from Spoonsparrow, you can also make healthy ingredients tasty for children.
Ingredients
- 1 kg mixed colorful vegetables (e.g. purple, waxy potatoes, sweet potatoes, colorful carrots, celery root, beetroot)
- Salt
- 2 sprigs thyme
- 4 tbsp olive oil
- Pepper
- 150 g apples (1 small apple)
- 1 small onion (40 g)
- 80 g tomato paste

Clean, peel, wash and cut the vegetables into sticks about the thickness of a finger. Cook in boiling salted water for approx. 2 minutes. Then shock and pat dry. Wash thyme, shake dry and pluck the leaves.

Mix the vegetables with 3 tbsp oil and thyme leaves and season with salt and pepper. Spread them out on a baking sheet lined with baking paper and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2-3) for 30 minutes, turning occasionally; increase the temperature to 220 °C for the last 5 minutes to brown the fries.

Meanwhile, peel, wash, quarter and deseed the apple, peel the onion; cut both into small pieces. Heat the remaining oil in a saucepan. Sauté the onion and apple in it for 5 minutes over medium heat. Add tomato paste and 2-3 tbsp of water, season with salt and pepper and simmer for 5 minutes. Then purée finely with a hand blender. Serve the vegetable fries with the ketchup.
