Tomato Tartare with Olives and Grilled Halloumi

Ingredients

  • 500 g ripe tomatoes
  • 100 g pitted black olives
  • 100 g feta cheese
  • 1 white onion
  • 2 tbsp lemon juice
  • Salt
  • Pepper (freshly ground)
  • 200 g halloumi
  • 1 tbsp plant oil
  • paprika powder
  • basil (for garnish)

Instructions

    Wash the tomatoes, dice them finely, removing seeds and stems.

    Chop the olives and feta into small pieces. Peel and finely mince the onion.

    Combine tomatoes, onions, olives, and feta; season with lemon juice, salt, and pepper. Arrange on plates using a serving ring for shape.

    Slice the halloumi thinly and quickly sear in a grill pan with oil. Place atop the tartare, sprinkle paprika, and garnish with basil.
