Cheese Chives Bites

Ingredients
- 300 g cream cheese (pure)
- 50 ml whipping cream (at least 30% fat content)
- Salt
- black pepper (freshly ground)
- Cayenne pepper
- 1 tsp lemon juice
- 1 tbsp Tomato Paste
- 0.5 tsp sweet paprika powder
- 8 large slices sandwich bread
- 3 tbsp cream cheese (pure)
- 1 bunch chives
- 1 Spring onion

Whisk the cream cheese and whipping cream in a bowl until creamy, then season with salt, pepper, cayenne pepper, and lemon juice for a spicy kick. Divide the cheese mixture in half; stir tomato paste and paprika powder into one portion. Wash the chives, dry them, and cut into small rolls.

Spread half of the bread slices with cream cheese, the other half with the tomato‑cream mixture. Place the cream‑cheese‑topped slices on top of the tomato ones, use a heart‑shaped cutter to cut out 16 hearts in total, brush each with a little more cream cheese and sprinkle with chives.

Arrange the sandwich hearts into four cloverleaf plates, add a sprig of spring onion green to each. Optionally slice remaining spring onions into rings and scatter them decoratively over the plates. Serve immediately.
