Tomato Tabouleh

Ingredients

  • 200 g Couscous
  • 200 ml boiling salted water
  • 4 tomatoes
  • 0.5 bunch spring onions
  • 3 Garlic cloves
  • 1 tsp coriander powder
  • 4 tbsp olive oil
  • 3 tbsp white wine vinegar
  • Salt
  • black pepper (freshly ground)
  • 1 bunch parsley (finely chopped)

Instructions

    Pour boiling salted water over the couscous and let it swell for 5 minutes. Fluff with a fork and set aside warm.

    Clean, wash, halve, core, and finely dice the tomatoes.

    Wash and trim the spring onions, slice into thin rings. Peel and mince the garlic.

  4. 4.

    Combine all vegetables, season with coriander, salt, pepper, add olive oil, vinegar, and 1/2 cup hot water; mix in a bowl with the couscous and parsley.
