Couscous Salad with Tomato Dressing

A vibrant couscous salad featuring asparagus for a vitamin boost.

Ingredients

  • 300 g green asparagus
  • Salt
  • 2 Spring Onions
  • 4 tomatoes
  • 150 g Couscous
  • 4 tbsp finely chopped parsley
  • 4 tbsp olive oil
  • 6 tbsp freshly squeezed orange juice
  • 6 tbsp freshly squeezed lemon juice
  • 1 Garlic clove
  • Salt
  • black pepper (ground)

Instructions

    Peel the lower third of the asparagus, cut the stalks diagonally into slices and blanch in boiling salted water for 3-4 minutes. Shock in cold water and drain.

    Wash, trim, and slice the spring onions into rings. Blanch the tomatoes in hot water, shock, peel, quarter, remove stems and seeds, then finely dice the flesh.

    Cook the couscous according to package instructions. Mix with asparagus, onion rings, and chopped parsley. Combine tomato cubes with olive oil, orange juice, and lemon juice. Peel and press the garlic into the mixture. Season with salt and pepper. Fold into the salad and let it rest for at least 15 minutes. Taste again before serving and plate on individual dishes.
