Ingredients

  • 8 ripe tomatoes
  • 2 Spring Onions
  • 2 stalks Cilantro
  • Salt
  • pepper (coarsely crushed)
  • 4 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 3 tbsp vegetable broth (glass)
  • 1 pinch sugar

Instructions

    Wash the tomatoes, blanch if desired, and peel. Halve them, remove the core, and cut into bite-sized pieces. Clean the spring onions and slice them diagonally into thin rings.

    Wash the cilantro, shake off excess water, and finely chop. Combine vinegar with oil, vegetable broth, salt, pepper, sugar, spring onions, and cilantro. Let sit for 3-5 minutes, then add to the tomatoes, mix well, divide into bowls, sprinkle additional pepper, and serve.
