Mexican-Style Rice with Tomatoes and Onions

Ingredients

  • 300 g beef tomato
  • 2 blue onions
  • 1 Garlic clove
  • 2 tbsp sunflower oil
  • 300 ml beef broth
  • 250 g long-grain rice
  • Salt
  • black pepper

Instructions

    Rinse the tomatoes with boiling water, peel, halve, remove seeds and stems. Cut the flesh into cubes.

    Peel the onion and garlic clove. Squeeze the garlic, dice the onion. Heat oil in a pot and sauté the onion mixture, add the tomatoes and cook briefly. Remove from pot.

    Add rice to the pot and sauté briefly. Pour in broth and 75 ml water, cover and simmer on low heat for 20 minutes until cooked. Add the tomato-onion mix during the last 5 minutes. Season with salt and pepper to taste.
