Tomato Soup with Beans and Tortellini

Ingredients

  • 400 g chunked tomatoes (canned)
  • 350 ml vegetable stock
  • 1 can beans (about 400 g)
  • 2 Garlic cloves
  • 1 onion
  • a handful basil
  • Salt
  • freshly ground pepper
  • 1 tsp chili powder
  • 250 g meat-filled tortellini (from the refrigerated section)
  • parmesan
  • olive oil

Instructions

    Peel and finely chop the onion and garlic. Heat 3 tbsp olive oil in a large pot, then gently sauté the onion and garlic until translucent. Add the tomatoes and continue to cook briefly. Simmer over medium heat for about 2 minutes before adding the vegetable stock.

    Bring to a boil and let it bubble for 1 minute, then remove from the stove and season with salt and pepper. Stir in the chili powder.

    Drain the beans and add them along with the basil leaves to the soup.

    Meanwhile, cook the tortellini according to the package instructions. Drain well.

    Divide the tortellini among four plates and ladle the soup over them. Sprinkle freshly grated parmesan on top and serve immediately.
