Ingredients

  • 2 ripe tomatoes (optionally peeled canned)
  • 1 red bell pepper
  • 1 tbsp basil pesto (jar)
  • 0.5 arugula
  • 200 ml tomato juice
  • 1 cup crushed ice
  • Salt
  • pepper (from grinder)
  • Tabasco
  • grated Parmesan

Instructions

    Boil the tomatoes, peel, quarter, core and roughly chop them.

    Wash the bell pepper, halve it, remove seeds, discard all white membranes, and roughly chop it.

    Wash the arugula, clean, shake dry and finely cut it.

  4. 4.

    Add tomatoes, bell pepper and arugula with pesto, crushed ice and tomato juice to a blender and blend well. Season with salt, pepper and a few drops of Tabasco. Pour into glasses and serve sprinkled with parmesan.
