Ingredients
- 2 red bell peppers
- 1 clove garlic
- 60 g dried tomatoes (oil-free)
- 2 tbsp olive oil
- 1 tsp Paprika powder (sweet)
- 400 g diced tomatoes (canned)
- 150 ml Vegetable broth
- 2 tbsp freshly chopped parsley
- 1 tsp lemon juice
- 1 tsp Honey
- Salt
- Pepper (freshly ground)

Wash the bell peppers, halve them, trim and cut into strips. Peel and finely chop the garlic. Slice the dried tomatoes into strips. Combine all in a pot with hot oil and sauté for 2-3 minutes. Add paprika powder briefly, then add diced tomatoes with broth and simmer gently for about 10 minutes.

Add parsley and season with lemon juice, honey, salt, and pepper before serving.
