Ingredients
- 250 ml broth (or clarified pan drippings)
- 100 ml red wine
- 250 ml heavy cream
- 20 g butter
- Salt
- pepper (from grinder)

Bring the pan juices to a boil. Simmer for 1-2 minutes and pour in the red wine. Reduce by about half, then add the cream and finish with a gentle simmer. Remove from heat and stir in the cold butter. Season with salt and pepper and serve.
