Ingredients
- 1 kg ripe egg tomatoes
- 150 ml Vegetable broth
- 1 tbsp Tomato Paste
- 3 tbsp olive oil
- 2 cloves garlic
- 2 shallots
- 1 sprig rosemary
- 4 sprigs oregano
- 1 bunch Basil
- sugar
- a splash lemon juice
- Sea salt
- pepper (ground)

Wash the tomatoes, remove the stem ends and quarter them.

Peel and finely chop the garlic and shallot. Sauté in hot oil until translucent. Stir in tomato paste and deglaze with broth. Add tomatoes, rosemary, and oregano. Simmer for about 20-30 minutes. Season with sugar, lemon juice, sea salt, and pepper. Remove herb sprigs and fold in chopped basil. Transfer to prepared jars, seal tightly, and let sit upside down to cool slightly. Flip again and allow to cool completely. The sauce will keep for at least two months.
