Ingredients
- 6 Spring Onions
- 2 cm ginger
- 1 Shallot
- 1 stalk lemongrass (white part only)
- 2 tbsp sesame oil
- 400 g ground beef (mixed)
- 500 g green mie noodles (or regular)
- 1 tbsp lime juice
- 4 tbsp dark soy sauce
- Szechuan pepper
Instructions

Wash, trim and finely chop the spring onions. Slice the green parts into ribbons. Peel and dice the ginger and shallot. Finely mince the lemongrass. Sauté the minced shallot, ginger, lemongrass, and chopped spring onions in hot oil until translucent. Add the ground beef and cook, stirring, for about 5 minutes until crumbly.

Season the beef sauce with lime juice, soy sauce, and Szechuan pepper. Serve over the cooked noodles and garnish with spring onion rings.
