Purple Egg with Mayonnaise

Ingredients

• 8 eggs
• 350 ml beetroot juice
• 2 tsp salt
• 2 Bay leaves
• 1 tsp black peppercorns
• 1 tsp juniper berries
• 7 tbsp white wine vinegar
• beet sprouts (optional)
• mayonnaise

   Before serving, peel the eggs. Optionally serve on beet sprouts with mayonnaise.
