Ingredients

  • 800 g tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 1 red bell pepper
  • 2 tbsp olive oil
  • 4 piment berries
  • 1 bay leaf
  • 1 clove of mace
  • 2 sprigs parsley
  • 1 sprig lovage
  • 4 tbsp brown sugar
  • 1 tsp mustard powder
  • 100 ml wine vinegar
  • Salt
  • Cayenne pepper

Instructions

    Wash the tomatoes, remove the stem ends and dice them. Peel and dice the onion and garlic cloves. Wash the bell pepper, halve it, deseed it and dice it.

    Sauté the onion, garlic and bell pepper in hot oil; add piment, bay leaf and mace briefly and then add the tomatoes. Simmer for about 15 minutes. Then stir in the herbs, brown sugar, mustard powder and vinegar. Let thicken for another 10–15 minutes. Strain through a sieve, bring to a boil again and season with salt and cayenne pepper. Transfer to a prepared bottle, seal tightly and let cool.
