Ingredients

  • 3 tomatoes
  • 1 white vegetable onion
  • 2 tbsp fruit vinegar
  • Salt
  • pepper (ground)
  • pinch of sugar
  • 0.5 tsp mustard
  • 5 tbsp sprouting oil
  • 1 tbsp chopped parsley
  • 700 g green asparagus
  • tortilla chips (ready‑made)

Instructions

    Wash, trim, quarter, deseed and cut tomatoes into small pieces. Peel the onion and dice it finely.

    Whisk mustard with vinegar, sugar, salt and pepper; then whisk in the oil until emulsified. Mix in tomato pieces, onion cubes and parsley.

    Wash, trim, cut off ends and peel lower third of asparagus. Blanch in boiling salted water for about 8‑10 minutes until firm yet tender. Drain, shock in cold water, dry, chop into small pieces and fold into the salsa. Serve immediately on plates with tortilla chips.
