Ingredients
- 1 bundle of small arugula
- 0.5 small head of lettuce
- 0.5 small iceberg lettuce
- 1 handful of soy sprouts
- 500 g mixed grapes (blue and white)
- 200 g Edam cheese (sliced)
- 1 tsp chili powder
- 1 handful walnuts (about 8 halves) per person
- 6 tbsp white wine vinegar
- 4 tbsp Walnut oil
- 4 tsp apple juice (or white grape juice)
- 1 tsp Honey
- Salt
- Pepper
Instructions

Wash, rinse, dry, and cut the salads into bite‑size pieces. Rinse soy sprouts under running water in a sieve. Wash, dry, halve, and pit grapes. Mix all together and serve on plates.

Combine all dressing ingredients in a bowl and whisk well. Slice cheese into wide strips and loosely arrange over the salad, sprinkle with chili and walnuts.
