Tomato Salsa

Ingredients

  • 8 tomatoes
  • 1 green bell pepper
  • 1 Red Onion
  • 2 Garlic cloves
  • juice of half a lemon
  • sugar
  • Sea salt
  • 4 tbsp olive oil
  • pepper (ground)

Instructions

  1. 1.

    Score the tomatoes crosswise from the stem end. Briefly blanch in boiling salted water until skins blister, then shock in ice water, peel, quarter and deseed. Dice finely.

    Wash, halve, seed, clean the bell pepper and dice small.

    Peel and finely dice the onion.

    Peel and finely mince the garlic.

    Combine all in a bowl and mix with lemon juice, sugar, sea salt, olive oil and pepper. Season to taste and serve with toasted bread or grilled meat as desired.
