Ingredients

  • 200 g green beans (trimmed)
  • 1 handful radishes
  • 3 romaine lettuce hearts
  • 200 g fresh strawberries
  • 2 figs
  • 1 handful watercress
  • 2 tbsp white balsamic vinegar
  • 0.5 lemon (juice)
  • 1 tsp liquid honey
  • 5 tbsp olive oil
  • Salt
  • pepper (ground)

Instructions

    Blanch the beans in boiling salted water for about 6 minutes, then drain, rinse with ice water and let dry. Peel, wash and slice radishes thinly. Tear or cut romaine into bite‑sized pieces, shake off excess moisture. Wash strawberries, halve larger ones and pat dry. Halve or quarter figs. Wash watercress and shake dry. Arrange all ingredients in a large bowl.

    Whisk vinegar with lemon juice, honey, oil, salt and pepper to make the dressing; taste and adjust seasoning. Drizzle over salad just before serving and serve with fresh white bread if desired.
