Ingredients

  • 700 g tomatoes
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 5 tbsp white wine vinegar
  • Salt
  • black pepper (freshly ground)
  • sugar
  • 2 tbsp freshly chopped basil

Instructions

    Blanch the tomatoes, shock them in cold water, peel, quarter, remove seeds and dice into small cubes. Peel and finely chop the onion and garlic, then sauté them in a pot with hot oil until translucent.

    Add the tomatoes to the pot, cook briefly, add the vinegar, and simmer over medium heat for about 20 minutes. Season with salt, pepper, and a pinch of sugar, stir in the chopped basil, and allow the salsa to cool before filling jars.
