Tomato Salad with Halloumi

Ingredients
- 1 kg mixed tomatoes (red, yellow, orange, green)
- 2 shallots
- 1 Garlic clove
- 4 tbsp olive oil
- 4 tbsp white wine vinegar
- 2 tbsp Lime juice
- 1 tsp Honey
- Salt
- Pepper (freshly ground)
- 250 g Halloumi cheese
- 1 handful purple basil
- 1 handful lemon basil

Wash the tomatoes. Leave smaller ones whole or halve them; slice larger ones and remove stems. Peel the shallots and garlic. Dice the shallots finely and mix with minced garlic in the oil. Whisk in vinegar, lime juice, and honey. Season the dressing with salt and pepper. Toss the tomatoes with the dressing in a large bowl. Let rest for at least 30 minutes and adjust seasoning.

Drain the halloumi well and slice it. Grill each side for about 3 minutes on a hot grill until golden.

Rinse both basil varieties, pick the leaves, and scatter them over the salad along with the grilled halloumi before serving.
