Ingredients
- 0.5 handful mint (Morocco)
- 1 large honeydew melon
- 200 g shrimp (pre-cooked, peeled and deveined)
- 1 tbsp raspberry vinegar
- 2 tbsp lemon juice
- 1 tsp Honey
- a pinch cayenne pepper
- Sea salt
- 150 g Feta

Rinse the mint leaves and shake dry. Halve the melon and remove the seeds. Cut the rind off the flesh. Slice the flesh into thin strips and arrange on plates. Rinse the shrimp and let them drain well. Whisk together the raspberry vinegar, lemon juice, honey, cayenne pepper, and sea salt to make a dressing. Stir in the mint and add the shrimp. Distribute over the melon slices. Dice or crumble the feta and scatter it over the salad.
