Ingredients
- 1 netted honeydew melon (or honeydew)
- 150 g arugula (125 g - 1 bundle)
- olive oil
- 20 g pine nuts
- 150 g Parma ham (thin slices)
- pepper (ground)
Instructions
-
1.
Wash, clean, trim, and dry the arugula; remove any tough stems if present.
-
2.
Toast the pine nuts in a pan without added fat until fragrant.
-
3.
Halve the melon, remove seeds, and cut into wedges. Separate the flesh from the rind with a sharp knife but leave it on the rind; slice the flesh across into small pieces and arrange them offset on the rind. Place the melon wedges on a plate, add arugula, drizzle with olive oil, and sprinkle pine nuts over the top. Lay ham slices on the dish and season with freshly ground pepper.
