Ingredients
- 60 g dried tomatoes
- 40 g pine nuts
- 1 Garlic clove
- 2 tbsp freshly grated Parmesan
- 1 stalk basil
- 120 ml plant oil
- Cayenne pepper

Cut the tomatoes into small pieces.

Roast the pine nuts in a hot pan until golden brown, remove and let cool.

Peel and chop the garlic, then crush it with the tomatoes and pine nuts in a mortar.

Rinse the basil, shake dry and pick off the leaves. Add to the mortar and grind.

Gradually pour in the oil until a creamy pesto forms. Season with cayenne pepper. Before serving stir in a little pasta cooking water if desired.
