Tomato Pesto

Ingredients
- 80 g dried tomatoes (in oil)
- 50 g feta
- 2 cloves garlic
- 2 tbsp pine nuts
- olive oil
- Sea salt
- Cayenne pepper

Drain the tomatoes and chop them.

Peel the garlic.

Toast the pine nuts in a dry pan until golden brown, then let cool.

Blend the tomatoes with garlic, feta, toasted pine nuts, about 50 ml olive oil and 2 tbsp of the tomato oil (drained) into a paste. Adjust oil quantity as needed. Season with salt and cayenne pepper. Transfer to a prepared jar, smooth the surface, and cover with olive oil. Store for at least 2 weeks in the refrigerator.
