Ingredients
- 150 g dried tomatoes
- 60 g pine nuts
- 4 Garlic cloves
- 2 tbsp balsamic vinegar
- 1 handful basil
- 100 g freshly grated Pecorino
- 200 ml olive oil
- 1 tbsp Lemon Juice
- Salt
- Pepper

Coarsely chop the tomatoes and add them with the pine nuts, peeled garlic cloves, and balsamic vinegar to a food processor. Rinse the basil, shake dry, strip leaves and add to the mixture with pecorino and a little oil. Blend into a creamy pesto while gradually adding the remaining oil. Season with lemon juice, salt, and pepper.
